Preparamos hoy una receta muy popular, la merluza a la romana. Siendo tan conocida, no son muchos quienes la preparan o preparamos en casa. A menudo recurrimos a la comodidad de comprarla congelada y freírla directamente; pero como siempre os decimos: nada que ver con lo preparado y cocinado en casa.
Este rebozado nos servirá también para verduras y otros pescados como la rosada, el bacalao, el calamar o el mero. Y como acompañamiento le vendrá genial cualquier ensalada fresca, un puré de patatas o unas patatas gajo de luxe.
Ingredientes que necesitamos:
- 2 rodajas de merluza por persona.
- 1 limón.
- 2 huevos.
- Harina.
- Aceite de oliva, sal y pimienta.
Elaboración de la merluza a la romana:
- Lavamos bien las rodajas o filetes de merluza con agua y retiramos las espinas que puedan quedar. Secamos bien con papel de cocina.
- Colocamos las rodajas en un bol, salpimentamos y marinamos con el zumo del limón durante diez minutos.
- Mientras, vamos preparando un plato con la harina y otro con los dos huevos batidos.
- Pasamos las cada rodaja o filete primero por la harina y después por el huevo.
- Freímos en abundante aceite caliente, pero no en exceso para que no se nos queme el rebozado y nos quede crudo por dentro.
