Calamares rellenos con salsa de almendras. Una receta para quedar como reyes con nuestros invitados o con la familia pues nos sirve como plato de diario o para celebraciones. Un plato riquísimo con mucho menos trabajo y más fácil de lo que parece.
Un plato perfecto para celebraciones como las Navidades que ya tenemos casi encima porque podemos prepararlo con antelación y congelarlo hasta las fiestas.

Ingredientes:
- 8 calamares.
- 1 cebolla.
- 1 diente de ajo.
- 300 gr. de gambas.
- 2 huevos cocidos.
- Caldo de las gambas.
Para salsa:
- 2 tomates.
- 1 cebolla.
- Perejil.
- 2 dientes de ajo.
- 50 gr. de almendras tostadas.
- Aceite de oliva, sal y medio vasito de brandy.
Elaboración de los calamares rellenos:
- Con las cabezas y cáscaras de las gambas prepararemos un caldo y reservamos.
- Separamos los tentáculos y las aletas de los calamares y limpiamos bien.
- Picamos una cebolla y un diente de ajo bien menudos y pochamos en una sartén con un poco de aceite.
- Cuando la cebolla esté dorada añadimos los tentáculos y las aletas todo bien picado en trozos pequeños. Rehogamos y sazonamos unos minutos.
- Añadimos las gambas también bien picadas, rehogamos y apartamos del fuego. Picamos los huevos cocidos y los añadimos al relleno.
- Dejamos enfriar y rellenamos los calamares.
- Con la otra cebolla, el diente de ajo y los tomates preparamos un sofrito. Cuando la cebolla esté pochada, añadimos los calamares rellenos y el brandy. Dejamos que se evapore el alcohol y agregamos el caldo.
- Cocinamos a medio durante unos 25-30 minutos.
- Mientras, preparamos en un mortero una picada con el perejil, el último diente de ajo y las almendras. Añadimos la picada a la cazuela y cocinamos unos minutos más.
